At the top of the Reflective Statement template it has the word STEAM in brackets after it. I understand from my Mentor that this was a method for structuring a reflective statement, but to my knowledge we haven't covered that... Can you advise?

Hi - the STEAM template was a previous format / template used for the portfolio and is a widespread format used in the wider HCS educational governance framework for constructing reflective statements.
It breaks down like this:
Situation – What happened?
Thoughts – What were you thinking / feeling?
Evaluation – What was good or bad about it?
Analysis – What relevance did it have to you / your practice?
Meaning – What changes will you make / conclusions have you drawn?
The format was changed to the current simpler reflective evidence template available on the website - you can either use the STEAM questions above or answer the question on the current template. You can use any format for reflective writing so long as it meets the module LO’s and course specs - but to be honest I would stick to the template provided on the website (as that is what the external assessor will be expecting) and answer the questions within this template as fully as possible for each piece of evidence. The key points being that open reflection of a past situation, activity or task; what did you learn, what went well, what not so well and what changes would / could you make in the future to improve.
